Blackberry & Avocado Salad

This simple little summer salad is versatile and tasty and aligns with a wide range of goals! 

Avocados provide most of the energy in this salad, along with vitamins B5 and B6, copper and potassium.  

The spinach provides vitamins A and C and manganese, while the Brazil nuts boost the selenium and blackberries top off the vitamin C and boost the flavour profile.

Ingredients 

SERVES 1

  • 50 g spinach
  • 50 g fennel bulb, shaved
  • 50 g blackberries
  • Half an avocado, sliced
  • 2 Brazil nuts, sliced
  • Juice and zest of half a lemon
  • 1 tsp olive oil
  • Salt and pepper

Directions 

  • Combine salad ingredients in a bowl.
  • Squeeze over lemon juice, drizzle over olive oil, and sprinkle over salt, pepper and lemon zest.
  • Toss and eat!
