Stuffed Zucchini

These simple look little stuffed zucchini boats pack a massive nutritional punch, the ingredients fine-tuned to maximise nutrient density across the board.  

The fetta and swiss cheese provide about half the energy, a solid dose of protein, along with calcium while zucchini provides a broad range of vitamins and minerals, particularly vitamins C, folate and potassium.   Mushrooms boost vitamin D, which is typically hard to get from food alone, along with copper.  The peppers (or capsicum) boost vitamin A and C while the spinach lifts the vitamin K, A and folate.
