Oven Roasted Broccoli

This oven-roasted broccoli is a quick, easy and super low carb healthy dish.  The generous addition of olive oil with sea salt makes for a sumptuous snack that brings this nutrient-dense vegetable to life.  

Olive oil provides most of the energy, while broccoli brings heaps of vitamins B5, B6, A, C and K1, along with choline, folate and potassium.

Ingredients 

SERVES 2

  • 1 bunch broccoli
  • 2 tablespoons olive oil
  • ½ teaspoon Celtic sea salt

Directions 

  • Pre-heat oven 200oc
  • Wash and cut broccoli into smallish pieces with long stems.
  • Toss broccoli in a large bowl with olive oil and salt
  • Spread the broccoli out on a parchment paper-lined baking sheet.
  • Bake for 12-15 minutes until tender and slightly browned
  • Serve as a side.
