This oven-roasted broccoli is a quick, easy and super low carb healthy dish. The generous addition of olive oil with sea salt makes for a sumptuous snack that brings this nutrient-dense vegetable to life.
Olive oil provides most of the energy while the broccoli brings heaps of vitamin B5, B6, A, C and K1 along with choline, folate and potassium.

- 1 bunch broccoli
- 2 tablespoons olive oil
- ½ teaspoon Celtic sea salt
- Pre-heat oven 200oc
- Wash and cut broccoli into smallish pieces with long stems.
- Toss broccoli in a large bowl with olive oil and salt
- Spread the broccoli out on a parchment paper-lined baking sheet.
- Bake for 12-15 minutes until tender and slightly browned
- Serve as a side.
