Molten Microwave Muffin

Created by Kelli Buckley, this dessert is a decadent treat.   Butter provides half the energy along with some vitamin A.  Eggs are packed with choline, selenium, phosphorus, vitamins B2, B5 and protein, while cocoa powder brings the chocolate taste we all love along with a range of minerals.  


One serve provides 200 calories, 7 g protein, 17 g fat, 22 g net carbs and P:E = 0.2.

  • 1 egg
  • 1 Tbsp oat fibre 
  • 1/2 tsp baking powder
  • 2 Tbsp unsweetened cocoa powder 
  • 5 tsp sweetener of choice
  • 1 Tbsp butter
  • dash vanilla extract
  • pinch sea salt
  • 3 Tbsp water or cold coffee 


  • Crack the egg into a coffee cup and whisk well with a fork.
  • Add all other ingredients and mix well with the fork 
  • Microwave on high for 40 seconds.  Adjust time depending upon the microwave.
