Molten Microwave Muffin

Created by Kelli Buckley, this dessert is a decadent treat.   Butter provides half the energy along with some vitamin A.  Eggs are packed with choline, selenium, phosphorus, vitamins B2, B5 and protein, while cocoa powder brings the chocolate taste we all love along with a range of minerals.

  • 1 Tbsp oat fibre 
  • 1/2 tsp baking powder
  • 2 Tbsp unsweetened cocoa powder 
  • 5 tsp sweetener of choice
  • 1 Tbsp butter
  • dash vanilla extract
  • pinch sea salt
  • 3 Tbsp water or cold coffee
