Mango Lassi Smoothie

The mango lassi is a luxurious milkshake or smoothie based on yogurt.  At Indian restaurants, they are a favourite dessert drink, but they are easy to prepare at home.

You can use either canned mango pulp or cubed fresh or frozen mango. Fresh mangoes should be ripe and sweet.

Mangos are packed with vitamins A and C, folate, copper, and potassium, while yogurt and milk contain protein, calcium, phosphorus, and vitamin B2. The egg provides extra protein, choline, and selenium.

Ingredients 

SERVES 1

  • 2 cups chopped mango, frozen 
  • 1 cup raw milk (or 1/2 coconut milk plus 1/2 cup water for Paleo)
  • 1 cup whole yoghurt (coconut milk yoghurt for Paleo)
  • Two organic, pastured raw egg yolks
  • One teaspoon of unflavored grass-fed gelatin (optional)

Directions 

  • Blend all ingredients until smooth. Serve. This smoothie also makes great popsicles!
