Curry Beef and Roasted Kale

This super simple recipe will smash your hunger with minimal calories.  

The lean beef gives you a mega-dose of protein along with vitamins B3, B5, B6 and B12, choline, zinc, selenium and iron.  

Greek yogurt adds luxurious texture, while kale boosts vitamins A, C and K1.

Ingredients 

SERVES 2

  • 1 pound grass-fed beef
  • 1 tablespoon curry powder
  • 1 teaspoon salt
  • 6 cups curly kale
  • 2/3 cup Greek yogurt
  • 24 or so mint leaves
  • Juice of 2 lemons
  • Salt & pepper 
  • Olive oil spray

Directions 

  • Brown ground beef with curry powder and salt and set aside
  • Place kale on the baking sheet.  Sprinkle with salt and pepper and spray with olive oil.  
  • Roast at 400 degrees for 15-20 minutes
  • Top with Greek yogurt, lemon juice and mint leaves
