- 1 pound grass-fed beef
- 1 tablespoon curry powder
- 1 teaspoon salt
- 6 cups curly kale
- 2/3 cup Greek yogurt
- 24 or so mint leaves
- Juice of 2 lemons
- Salt & pepper
- Olive oil spray
Directions
- Brown ground beef with curry powder and salt and set aside
- Place kale on the baking sheet. Sprinkle with salt and pepper and spray with olive oil.
- Roast at 400 degrees for 15-20 minutes
