Ingredients
SERVES 2
- 2 rashers of bacon, sliced 1 cm strips
- 2 large mushrooms, sliced
- 3 whole eggs, beaten
- 1/4 cup grated cheddar
- Salt & pepper to taste
Directions
- Heat a non-stick frying pan to medium heat, add the bacon and fry until the bacon is crispy.
- Add the mushrooms and cook a further few minutes until the mushrooms are soft, Place the mixture on half your plate and set aside.
- Re-use the pan to scramble the eggs by returning the pan to the heat, add the beaten eggs and cheese and stir to scramble and cook.
- Once the eggs are solid, tip onto the other half of the plate with the mushrooms and bacon mixture. Sprinkle salt and pepper to taste.
